Achat (Thai Cucumber Salad)
1/2 cucumber
Dressing: 1 tbsp vinegar 1 tbsp finely chopped shallots 1 tbsp chopped coriander 2 tbsp finely chopped peanuts
note: fresh mint can be substituted for coriander
6 oz Thai Plum Sauce

Chop desired amount of cucumber into thin chunks

Mix the remaining ingredients in a bowl

Pour salad dressing over top of cucumber and mix.
This is a wonderful side salad for barbequed chicken or use the dressing as a dip for firm tofu that has been pan fried until the outside is crunchy.
Note: this dressing recipe will make several salads. It can be stored in the fridge for up to 2 weeks. |
